I recently purchased a second-hand cookbook called The New York Times NEW Natural Food Cookbook - it was originally published in the early 70's! So, it's anything but "new" now - but it's wonderful!! Old-fashioned recipes with real food ingredients! These Peanut Butter and Banana Bars are great as a snack or a special treat! And they're very portable! I've already made several batches this year! Skyrah loves them! Try 'em and let me know what you think!
Peanut Butter and Banana Bars
2 eggs, well beaten
1/3 cup peanut butter (I have also used almond butter)
1/4 cup molasses
1/2 cup brown rice flour (I have reduced this t0 1/4 cup and added 1/4 cup whole oats)
1/2 cup chopped walnuts or peanuts (I have also added raisins, pumpkin seeds, sunflower seeds, and even a few chocolate/carob chips!)
1 ripe banana, chopped (I just mush it up!)
1/2 teaspoon ground cinammon
1/4 teaspoon salt
1. Preheat oven to 350 degrees and grease an 8 inch square pan.
2. Combine all the ingredients and turn into baking pan. Bake for about 15 minutes.
3. Cut into bars while still warm. (and enjoy!)
Yield: 12 - 18 bars
